How baked-on grease softens
Basket grease is cooking oil oxidized and polymerized by repeated high heat into a tacky, hard film. Mild alkaline builders partly saponify the oil and weaken its grip on the nonstick coating, nonionic surfactants emulsify the softened grease, and the foam extends contact time so the chemistry reaches thick layers; a gentle sponge then lifts it without abrasion.
